Capucijner peas are a classic Dutch heirloom pea, named after the Capuchin monks who grew them there in the 1500s. Cooked in water, they make their own thick gravy while keeping their shape and remaining firm, yet creamy. With a delicate pea flavour, they can also be used in place of pinto or black beans, making them incredibly versatile. Use them in soup, curries, stews, casseroles, refried in tacos, or served as a side dish with caramelized onions and diced bacon or ham, these peas triple in size when they cook, so a little goes a long way!

Cooking and Preparation:
Soak over night, drain and simmer in fresh water for 4-6 hours. Add seasonings, or other ingredients once the peas are softened.
Storage:
These peas are perfect for storing over the winter, they can be kept sealed in the freezer, or in a well-sealed jar in a cool and dry environment. Use within one year of purchase for the best flavour.
